Description

Tender, bakery-style chocolate chip muffins with perfectly domed tops and pockets of melted chocolate throughout. This foolproof recipe uses a special temperature technique for professional results every time!


Ingredients

  • 2½ cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ½ cup unsalted butter, melted and slightly cooled
  • 1 cup granulated sugar
  • 2 large eggs, room temperature
  • 1 cup full-fat sour cream
  • 2 teaspoons pure vanilla extract
  • 1½ cups semi-sweet chocolate chips (plus extra for topping)
  • ⅓ cup milk

Instructions

  • Preheat oven to 425°F (220°C) and line a 12-cup muffin tin with paper liners.
  • In a large bowl, whisk together flour, baking powder, baking soda, and salt.
  • In a separate bowl, whisk melted butter and sugar until well combined. Add eggs one at a time, beating well after each addition. Stir in sour cream and vanilla until smooth.
  • Pour wet ingredients into dry ingredients. Fold together gently until just combined. Add milk as needed for a thick but scoopable consistency.
  • Fold in 1¼ cups chocolate chips, reserving remaining ¼ cup for topping.
  • Divide batter among muffin cups, filling each about ¾ full. Sprinkle reserved chocolate chips on top.
  • Bake at 425°F for 5 minutes, then reduce temperature to 350°F (without opening oven) and bake for another 13-15 minutes until golden.
  • Cool in pan for 5 minutes, then transfer to wire rack to cool completely.

  • For dairy-free options, substitute butter with coconut oil, sour cream with coconut yogurt, and use dairy-free chocolate chips.
  • Toss chocolate chips in 1 teaspoon of flour before adding to prevent sinking.
