Instructions
1️⃣ Roast the Chiles & Tomatillos
- Preheat oven to 425°F (220°C).
- Place tomatillos, green chiles, onions, and garlic on a baking sheet.
- Roast for 20-25 minutes until charred and blistered.
- Let them cool, then peel off charred skins.
2️⃣ Prepare the Chicken
- Season chicken with salt, pepper, and cumin.
- Sear in a hot pan with oil until golden brown. Remove from the pan.
3️⃣ Make the Verde Sauce
- Blend roasted tomatillos, chiles, onions, garlic, and cilantro with a splash of chicken broth.
4️⃣ Cook the Stew
- Sauté diced onions and jalapeños.
