Description

This Chicken Chile Verde Stew is a comforting, flavorful dish made with tender chicken, roasted green chiles, and a rich verde sauce. Ingredients

  • Chicken (boneless thighs or breast)
  • Fresh tomatillos
  • Fire-roasted green chiles
  • Onions and garlic
  • Cilantro
  • Jalapeños (for heat)
  • Chicken broth
  • Cumin, oregano, salt, and pepper

Instructions

1️⃣ Roast the Chiles & Tomatillos

  • Preheat oven to 425°F (220°C).
  • Place tomatillos, green chiles, onions, and garlic on a baking sheet.
  • Roast for 20-25 minutes until charred and blistered.
  • Let them cool, then peel off charred skins.

2️⃣ Prepare the Chicken

  • Season chicken with salt, pepper, and cumin.
  • Sear in a hot pan with oil until golden brown. Remove from the pan.

3️⃣ Make the Verde Sauce

  • Blend roasted tomatillos, chiles, onions, garlic, and cilantro with a splash of chicken broth.

4️⃣ Cook the Stew

  • Sauté diced onions and jalapeños.
  • Pour in verde sauce and simmer for 5 minutes.
  • Add seared chicken and broth, then cook on low for 45-50 minutes.

5️⃣ Serve & Enjoy!

  • Garnish with cilantro, lime, and avocado.
  • Serve with rice, tortillas, or beans

Notes

  • For a milder version, use Anaheim peppers instead of jalapeños.
  • Add extra spice with serrano or habanero peppers.
